Impossibly Easy Coconut Pie

Enjoy a scrumptious coconut pie that's impossibly easy to make because there's no crust to roll.

Prep Time:10 min
Start to Finish:1 hr 5 min
Makes:8 servings


1/2 cup Original Bisquick® mix
2 cups milk
1 cup flaked or shredded coconut
3/4 cup sugar
1/4 cup butter or margarine
1 1/2 teaspoons vanilla
4 eggs

1. Heat oven to 350ºF. Grease 9-inch pie plate.
2. Stir all ingredients until blended. Pour into pie plate.
3. Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.
High Altitude (3500-6500 ft) No changes.

Talking Easy Vegan Banana Muffins...

Easy Vegan Banana Muffins

Ingredients:
3 ripe bananas
1/4 cup oil or margarine (I used olive oil)
1/2 cup sugar
2 cups flour
1 tsp salt
1 tsp baking soda
Optional: chopped nuts or frozen blueberries

Directions:
Preheat oven to 360
cook for around 25 minutes

-In large bowl mash bananas with fork til soft. Add oil or margarine and sugar.
- In separate bowl (I just used the same bowl) put flour, salt and baking soda.
-Combine mixtures
- Fill each muffin cup area 2/3 full w/ batter.
- make sure to grease muffin pan or use paper baking cups.

(makes a dozen)

Have you made any yet? And is it good? I love banana bread (with nuts).

Yep, made them today. It took only a little over 5 minutes to mix up a batch and put them in the oven. So in a half hour or so, I had yummy muffins I plan on making 2 dozen next time. I can see these going fast.

The boys each got one at lunch and liked them very much. I would have added nuts too but can't since I want to give them to Ethan and even might be concerned about Colin not doing well with nuts? Blueberries could be yummy though!

Yeah, I wouldn't add nuts with the kids either. Not only for choking, but also don't want to "encourage" any allergies to develop at this age.

I'll avoid nuts for choking but I'm not worried about allergies. I give both of them peanut and almond butter. Recently I think the medical world is saying that introducing things early might help prevent allergies unless there's a known allergy in the family. I don't think they really know anything. I know none of my family has nut allergies so I don't worry too much.

I never did either. And how stupid of me - I knew you give them peanut butter. Not sure what I was thinking.
